Italian Chicken — low carb

Ingredients

  • 2-3 chicken breasts, cut into strips
  • 1 green pepper, cut into strips
  • 1 sweet pepper (your choice of color), cut into strips
  • 1 med onion, sliced into strips
  • 4 garlic cloves , minced
  • 2 Tbsp olive oil
  • 1 Tbsp Italian seasoning
  • 1-2 cups mozzarella cheese, shredded
  • 1 tsp salt (to taste)
  • 2 tsp pepper (to taste)
  • 1 Tbsp dried parsley
  • 4 buns (if using)

Instructions

  1. Preheat oven to 375

  2. Cut your chicken into strips and put in baking dish. Salt and pepper your chicken.

  3. Cut your peppers into strips and place on top of the chicken.

  4. Cut your onion into strips and place on top of chicken/peppers.

  5. Toss all with olive oil.

  6. Add Italian seasoning and garlic. Mix all ingredients well.

  7. Bake for 30-40 minutes — stirring 1/2 way through.

  8. Take out of oven and sprinkle the top with mozzarella cheese. Broil for 2 minutes to melt and bubble the cheese.

  9. Take out of oven and sprinkle with dried parsley.

  10. For low carb - eat as is. If you are not eating low carb you can eat it on garlic toasted buns as a sandwich.
